I have two jpeg images on separate layers on the canvas. I would like to expand the size of each of the jpeg images to fit the (larger) canvas. How do I do that. It’s such a simple thing but I can find no way to do it.

Hello Jack, and welcome to the forum
What you want to use is the Layer ▸ Rotate and Transform ▸ Scale and Rotate menu item (shortcut key cmd-shift-T).
Then your layers will have little handles on them and you can expand the layers to fit the canvas (and it should snap to the edges automatically when you get close).
If you’re using Acorn 7, and if you have the move tool selected, you can also double click on the layer and it’ll fall right into the resize mode.
